This was implemented in the Qt GUI application but I don't think the feature made it to the Web UI yet. For example here:

@crankedguy commented on GitHub (Sep 4, 2021):
Would be really great to get this implemented as I am running headless and need it for private trackers. Otherwise they ban me. Else I would have to install a dedicated client for that.
Thanks
@FranciscoPombal commented on GitHub (Oct 18, 2021):
@crankedguy
qBittorrent automatically disables these features for private torrents (i.e., torrents that have the "Private" flag set), so there is no such issue, even without this feature implemented.
@Derkades commented on GitHub (Oct 18, 2021):
Thanks, I didn't know torrent files could contain a 'private' flag.
@Snake883 commented on GitHub (Dec 21, 2022):
Is there a workaround, per public torrent to not use DHT, for the WebUI?
@Hackerpcs commented on GitHub (Mar 15, 2023):
There are trackers that can be both public without the flags and track stats, e.g. rutracker.org
